  1. Place two tortillas on a greased baking tray. Top each with salsa, cheese and remaining tortillas. Grill 10cm from the heat for 3 minutes on each side or until golden brown. Cut into wedges.

I wanted to use up 2 tortillas that were left over. I'm not that keen on salsa but had some in so gave it a try for my lunch. It was delicious! My little girl loved it too. Would be lovely with chicken for a more substantial meal and say served with rice. I will never throw any wraps away again! Thank you.-27 Jun 2014

Altered ingredient amounts.before making the wraps up a put butter in them to hold it together better and grilled them instead of oven baking but same great taste.........my kids can't wait to have them again-10 Feb 2009


Recipe Summary

  • 4 teaspoons canola oil
  • 8 corn or flour tortillas
  • 2 cups grated cheese, like queso blanco or Monterey Jack
  • 1 cup filling, room temperature (optional)
  • Sour cream, for serving (optional)
  • Tomato Salsa, for serving (optional)
  • Chunky Guacamole, for serving (optional)

Heat a skillet over medium heat, and add 1/2 teaspoon oil. When oil is hot, place 1 tortilla in pan sprinkle with 1/4 cup grated cheese, 1/4 cup filling, if using, and another 1/4 cup grated cheese. Top with second tortilla, and cook until cheese is melting and the bottom of tortilla is golden brown. Flip, and cook until golden on both sides, the cheese is melted, and the filling hot.

To serve, cut quesadillas into wedges, and serve with sour cream, salsa, and guacamole on the side, if desired. Repeat with the remaining ingredients, serving each quesadilla hot from the pan.


Tips to Make Ahead and Reheat Quesadillas

For make-ahead quesadillas, choose your fillings wisely. Avoid watery fresh vegetables like tomatoes, which can make the tortillas soggy. Likewise, don't put salsa inside the quesadilla if you're making them ahead.

Before storing quesadillas, allow them to cool completely. Wrap quesadillas individually in plastic wrap refrigerate 3 to 4 days.

To freeze wrapped quesadillas, stack them on top of each other and wrap the stack in an additional layer of aluminum foil.

Defrost quesadillas in the refrigerator. Quesadillas defrosted on the counter or in a microwave will get soggy.

Reheat quesadillas until they are just heated through, since they were previously cooked. You can use several methods.

I’ve always wondered who came up with the name, although it makes sense since all the components are layered one on top of another forming a synchronization of elements, especially in the ham and cheese sincronizada.

The flour tortillas are filled with melted cheese (usually Oaxaca, Chihuahua or Manchego cheeses are used in Mexico) and ham. Another dish similar to a sincronizada is one that has cheese and “Al Pastor” meat, but this one is known as a “Gringa”, not a sincronizada. Of course, you can use your imagination and add refried beans, grilled onions, or other fillings to make your sincronizadas as unique and as tasteful as you want.

This is the basic and most familiar version of the sincronizada. It is usually served with Pico de Gallo salsa, Guacamole, and cream. But you can also eat them with Pickled Jalapeños or your own salsa.

Well, folks, we&rsquove got a recipe that will have you using that trusty gadget a heck of a lot more often: quesadillas. This is one of those why-haven&rsquot-we-tried-this-before methods that&rsquos simple to execute but yields impressive results. Place a tortilla onto your waffle iron, add shredded cheese and then top with another tortilla. Close the waffle iron and in minutes you&rsquoll have the most golden, melty, crispy-edged quesadilla you&rsquove ever seen.

8 tortillas (make sure they aren’t larger than your waffle iron)

2 cups shredded cheddar cheese

2 avocados, peeled and sliced, for serving

1 cup salsa verde, or more as needed, for serving

1. Plug in and preheat the waffle iron. Grease the interior with nonstick spray.

2. Place a tortilla on the waffle iron and mound ½ cup cheese in the center.

3. Place another tortilla on top and close the waffle iron to press the quesadilla. Cook until the quesadilla is golden and fully heated through, 3 to 5 minutes.

4. Remove the quesadilla from the waffle iron and repeat with the remaining tortillas and cheese. (If you&rsquore making a larger batch, keep the quesadillas warm and toasty in a 200°F oven.)

5. Serve the quesadillas warm, topped with avocado slices and a few tablespoons of salsa verde.

How to Freeze Quesadillas
